Hong Shao Rou / Red Braised Pork Belly. Basically sticky and sweet popcorn pork. Utterly delicious. Served it with a wood ear mushroom salad (Xiang Cai Mu Er) and hot and sour courgettes (Tang Cu Yi Da Li Gua). #foodsky 🍜🍽️

Bought my dad a smoker 2.5 years ago and he’s never used it, so I’ve gone home and smoked 4kg of pork ribs. #foodsky 🍽️🍜

I do wonder if our calculus would be different if Platner was like 10 points ahead of Collins AFTER the allegations, and if he were the only Dem able to manage that. He was already slipping, and the fact that he's obviously going to lose now makes the decision to dump him pretty trivial.

The finale of Widow’s Bay is superb. Caps a terrific season of TV with such fantastic writing that you’re immediately annoyed we’ll have to wait so long for the next episode. Apple TV knocking it out of the park again.

Having chicken with tarragon tonight so treated myself to a Spanish Chris. 7.5g tarragon leaves blender muddled with the spirits 45ml mezcal 15ml luxardo 22.5ml lime juice 15ml syrup 3 drops saline Strain the muddled tarragon then add with lime, syrup, and saline. Shake and serve. #cocktails 🍸🍹

It’s a great salad
It’s a photo of Favorite Salad of All Time from Matty Matheson’s Home Style Cookery book. 

SERVES:
4 TO 6
PREP TIME:
20 MINUTES


What can I say? Is there anything better than a perfectly dressed lettuce leaf salad? No! The answer is no! With a bit of tuna and chopped vegetables, this is not just a side, it can be the main attraction.

0.5 cup (100 ml) white vinegar
1 cup (40 g) chopped flat-leaf parsley
3½ tablespoons canola oil
3% tablespoons extra virgin olive oil, plus more for finishing
1 teaspoon sea salt
0.25 cup (40 g) green olives, pitted and chopped
0.3 cup (30 g) diced celery
0.25 cup (30 g) finely chopped shallot
½/ cup (55 g) sliced cooked green beans
½/ cup (30 g) diced cucumber
1 (5-ounce/142 g) can albacore tuna, drained and flaked
2 heads (200 g) green leaf lettuce
Freshly ground black pepper

In a small bowl, combine the vinegar, parsley, canola oil, and olive oil and blast it with an immersion blender until incorporated. Season with salt.

In a medium bowl, combine the green olives, celery, shallot, green beans, cucumber, and tuna and dress with half the dressing
In a separate medium bowl, toss the lettuce with the remaining dressing and season with salt and pepper.

Start by layering 3 leaves of lettuce in a tight pile and spoon over the tuna mixture to cover the lettuce. Repeat 3 times, until you have a mountain of salad; finish the top layer with the tuna mixture and splash the top with olive oil and salt.

Just finished reading Flesh by David Szalay. Had a visceral reaction to it. Not sure I liked it, or anyone in the novel, but it did make me want to write. It made me want to make active choices in my life. #Booksky 📚📖

Caught up with a British Indian mate of mine over text tonight. I was trying to offer him a job and he said he wants to be super rich like Elon Musk. I called Musk an idiot and white supremacist, and our conversation ended like this. I need to stop being friends with him, right?

A friend from Singapore is visiting and she misses Asian food so we’re back on a Sichuan kick. Boiled Beef (水煮牛肉). Served it with some smashed cucumber. Really tender and flavoursome with that great mouthfeel from the mala. 🍜🍽️ #foodsky

This was a hit. Rodrigo described it as a vegetarian aguachile. It’s an ensalade de calabacitas y espárragos. Basically raw courgettes/zucchini and asparagus in a vinaigrette of lime juice, olive oil, and chillies. 🍜🍽️🌱 #foodsky

You can tell you’re in the Baltics when the airport lounge has a Jäegermeister dispenser. Next to all the spirits there is just a series of shot glasses, no tumblers.

It’s amazing the number of people that believe this. I got into a bit of an argument with a colleague about my refusal to travel to the US. It descended into this. I found it so funny that the typical IQ range could be considered as having read a lot of books…

Scott Adams was a piece of shit, and he once wrote a Dilbert that colleagues asked if I had somehow commissioned it.

Season 2 of Landman is great. The whole of the Taylor Sheridan Televisual Universe is pretty terrific. Just need an Avengers style crossover episode. However, it’s such a shame it’s all on the Nazi channel, Paramount+. #series #TV #Landman 📺

Justifiably. It’s weird wanting a World Cup to be a failure because the pricing of tickets is outrageous. As you say, nothing will actually change unless people do speak out (or don’t buying tickets) On the surge pricing on cat 4 tickets, most of the time it’s hard to find any cat 4 tickets at all!
It’s a seat plan for the stadium in Boston to be used for the World Cup. The different categories have different colours. The majority of the stadium is gold for category 1 tickets, the most expensive. Tucked right in two of the corners are small slivers of green, representing the cheapest tickets.

In Egypt, travellers seemingly need telling not to hang clothes on sprinklers. It’s so high that I, at 6’4”, can’t reach it. But someone must have done it to prompt the sign, right?

But this is just about salary sacrifice contributions, right? This doesn’t impact the standard minimum 3% employer and 5% employee contributions. This is only if you opt to contribute more in a salary sacrifice scheme.
