They refuse to intentionally cause physical suffering, directly at least. They will kill people, destroy things, have people killed, etc etc But they always try to ensure the deaths of people are instant, they have a very strange mix of overwhelming empathy mixed in with their own twisted desires.

I think flashbacks can be incredibly invaluable when trying to connect the reader/viewer with the event, since you're putting them into the event as it happened in the past. I do think an overreliance on flashbacks can be an issue though, but then again an overreliance on anything is an issue :P
