<rant> I hate how much tuition costs out of state. The university I wanted to transfer to study Fermentation Science wants $42k per year. They offer classes on Spirit Distillation and Beer Brewing (and wine brewing, but I prefer drinking Whiskey and Beer).

I was reading my chemistry book and apparently, Water still makes 10^(-7) mol hydronium ions (hence why its pH is 7) despite being neutral cuz it has to split into its conjugates through Autoprotolysis (one water molecule acting as an acid and another as a base). 2H2O <-> H3O[+] + OH[-]

So I spent a lot of time doing Stoichiometry and pH calculations only to realize the pH of a cider must does not shift enough to be considered "changed" effectively, especially when the pH is not how Campden Tablets (Potassium Metabisulfite) kill wild yeast and bacteria (including MLF bacteria).
