Even in America we have quite the variety. The thing is, what I’m calling barbecue is called something else to distinguish it from the others. The mechanics are ubiquitous. What you cook, how you cook it, and what you eat it with make all the difference.

And in a century or so the barbecue comparison may be appropriate. Till then, when discussing food created by immigrant restauranteurs to appease the hog-like tastes of the locals, I would recommend using Italian-American cuisine as an analogy. Much more accurate
