wife me up for recipes like this where i hear butternut squash sausage and then decide it must be made! hard to find good sausage i tell you what, but i’m in love with this😩😋 #cooking

ingredients and recipe(i omitted the greens because i forgot to get them at either store i went to for the ingredients)
1lb hot or mild Italian sausage
Olive oil
2 garlic cloves, minced
2 tbsp chopped fresh thyme
1 (15 oz) can cannellini beans, drained and rinsed
1 Ib ditalini
1 (32 oz) carton butternut squash soup (pacific is what was at my target)
2½ cups chicken broth, plus more as needed(i didn’t need any but you may find you want it soupier)
2 cups chopped kale, spinach or Swiss chard
½ cup grated Parmesan
Red pepper flakes, optional as a garnish
Add the Italian sausage to a large skillet or pot (I used a 3.5ąt braiser, but 5-qt is even better for this amount) with a drizzle of olive oil. Cook, breaking it up as you go, until browned.
Add the garlic and thyme and cook for about 30 seconds, just until fragrant.
Add the beans, pasta, butternut squash soup and 2½ cups chicken broth. Stir everything together and bring to a simmer.
Cook, stirring frequently (it can stick to the bottom easily so be careful w that), until the pasta is almost cooked through. Keep some extra broth nearby and add a splash as needed if it gets too dry before the pasta is done.
During the last couple minutes of cooking, stir in some greens until wilted.
Turn off the heat and stir in the Parmesan. Plate and add more parm and red pepper flakes

midway through just after adding all ingredients to the single pan(make sure it’s big this makes a lot of food actually)

and the finished result and plate yummy!

i did some shop therapy this weekend and bought a new cute dress for fall and got a pair of cute loafers and i got a chiikawa shirt! excited cause it’s so warm! anyways animals soon maybe idk

sometimes i cook and todays meal was ribeye and creamy parm reggiano polenta. my plating could use some work but also i love steak. my mom even said the steak was good, like butter and it made her day😍

a few weeks ago i saw the most beat up butterfly but they were still flying around like they were missing half their wing😢 #bugs #invertebrates i think it was a black swallowtail? maybe?
