In an alternate reality today is my 16th wedding anniversary. I’m so thankful I’m 8years divorced and instead am celebrating my favorite pie shop’s 10th anniversary with four limited edition pies.

Earl Grey Cream Pie: Individual all-butter pies filled with Earl Grey pastry cream and chocolate, topped with fluffy vanilla bean whipped cream and crushed pistachios. One pie is held above several others.

Congee Chicken Pie: Two halves of a golden, flaky pie filled with jasmine rice congee, chicken, shiitake mushrooms, ginger, and green onion. Topped with dark Thai chili sauce, fresh cilantro, and green onion.

Banoffee Pie: Individual all-butter pies layered with bananas, salted caramel, and chocolate, topped with swirls of vanilla bean whipped cream and cocoa powder. One pie is held above several others.

Thai Green Curry Chicken Pie: Two halves of a golden, flaky pie filled with chicken, coconut green curry, Thai basil, makrut lime leaves, and red chili. One half is held above the other with a small Thai flag.

I love my neighbors so much. At 1:40am I woke up thinking it was normal insomnia. When I couldn’t go back to sleep I got on my phone and saw messages in the group chat. One neighbor was having a crisis. Two of us woke up. We don’t share walls, so it’s not like we heard her or something
