Rotorua is a wonderful spot. mud baths are great there, but for food I did a maori dinner (search Mitai Maori Village), I'll add some pics here! Rotorua isn't too terribly far from Hamilton, which is where a lot of your stuff will be so it should be easy to slot a day in it you haven't already.
