Io per questo uso i grammi, perché in quel modo tolgo ogni soggettività sull'ordine di grandezza. Io ho un paio di ricette dove faccio le polpette da 100g, ma vanno in forno insieme alle verdure e hanno un sacco di pecorino grattugiato dentro (ed un uovo per legare).

Allora, la dimensione delle polpette, da un punto di vista puramente tecnico dipende da quanto tempo hai per la cottura. Io di solito, durante la settimana, dove ho circa un'oretta per mettere la cena in tavola, le faccio da 25/30 g l'una e cuociono in 15/20 minuti. 1/2
