I feel like a big part of DS is deciding how to engage with enemies, and to me, avoiding enemies is a sound strategy. It feeds into the resource management, letting you decide if this encounter is worth spending time/potential healing on. DS isn't a beat em up; don't need to kill everything you see

That is fair! There are a lot of things going on at the same time. I can see the complexity being a problem if you've started with a game past the first one

The first waypoint is typically just beating the story mode, which doesn't take much grinding. Once you're in post game, use the training maps to grind for post game stories next goal should be trying to get rank 39/40 items Despite it seeming like an endless climb, there are defined waypoints
