Today's healthy-ish box lunch. The hubs gets a 1/2 a low carb pita stuffed with plum chutney chicken salad with almonds, pea and carrot salad with tarragon aioli, a spicy pickle and tomato. He gets a couple of peeled sectioned mandarin oranges because he'll eat them while driving.

East light dinner. Dark rye with labne, a late tomato, and plum chutney. It's fun for me to make everything. Later for dessert I'm actually cutting into a cheesecake-ish dessert, winter squash, crystalized ginger, dates, with a vegan base. The crust is salty GF crackers, cereal, dates, walnut oil

My afternoon at work was crap, so I left. I went shopping for dinner. I made salmon rubbed with rice vinegar then seasoned with just just a bit of salt, pepper and dill. Broasted Brussels sprouts with thyme and garlic, spuds with fennel powder and garlic. Great meal, but the spuds 🤤! 🤤!

Call me crazy, call me persistent, but most of all I am stubborn. So, while cooking breakfast this morning I am looking at the multiple squash that need to be baked. I need a loaf of bread made. That stubborn part of me decided to try the oven again. It WORKED. I'm afraid to turn it off now.

My oven is still dead. I have good experience working on appliances. This stove is the most difficult appliance I have ever worked on. I replaced the oven's igniter, that wasn't it. I need t test the aftermarket part. Could be the thermal fuse. Clogged gas port> I have no bread...

Tonight for dinner I made a Korean Japche. I used lap cheong or Chinese sausage for protein. It was quite delicious, but I wish I had some spinach or some other dark green for contrast. But yum anyway!

My peppers are on their way to become hot sauce. Unlike previous batches I added garlic, ginger, and tangerine zest. I had to add some cayennes I dried last year to bring up the heat. Yum!

It was a dismal pepper crop this year. Two of 8 plants I put in were what they were supposed to be, 6 we're not. I bought starts at a farmers instead of my typical source. There's not a lot of heat in some of the peppers so I will add some cayennes I dried last year. It's fermenting time.

Yay!!! I have been in contact with the shelter where we rescued Thor from. The found a DOB for the boy. Hie is 5 1/2, his bday is 6/24. He gets a steak that day.

Oh boy! Hubs need a part at an apartment storage in Everett so I tagged along. We had lunch in Marysville at my favorite Korean restaurant Korea House and BBQ. Hands down delicious food. Their nicely varied banchan kept getting refilled. I had sift tofu pork soon doo boo. 🤤

Hubs is on call so no day long road trip. Had a busy morning. I have 2 Dyson's, a Stick of 5 years and their Animal vacuum for over 20 yrs. I took them apart and cleaned everything to keep them working their best and make them last. They're work horses.

I got vaxxed yesterday. Chills last night, punk feeling when I woke. Sick, I need to clean, every damn time. Wire Thor out early and I have been on a cleaning frenzy since 9:30. 1 hour more if cleaning then I'm hiding in the kitchen. Soup season crashed in on us.

Yesterday I had a full kitchen day. I left for an hour to walk Thor so I spent 12 hours cooking. I cooked breakfast, lunch, and dinner. I started my sourdough dark rye, made pizza dough for later use, fermented fresh corn with jalapenos, shallots, and garlic, and made pickled eggs.

Today's healthy-ish box lunch. The hubs gets a panzanella, Italian bread salad. Made with stale bread, tomato, tuna, olives, capers, pepperoncini, l pecorino, fresh basil and other herbs. Plain yogurt topped with blueberry sauce for a snack. Yum! I should have made myself the salad too. 🫤

Not my typical post football fare, but dinner rocked. I wanted to use what I have in hand (a lot, I hit farm stalls and markets yesterday) I made corn, jalapeno, and tofu stir fry with garlic, shallots, tomato, basil. The simple sauce was lime juice, soy, and hoisin sauce. Yum!

I thought this was cool of the Mount Vernon parks dept to put in a bike repair station. Next to it there is a hand pump and nozzle. The cables hold assorted tools. You can suspend your bike on the padded red handles at the top. It's right next to a trail along the river downtown plaza.

We drove up to Hurricane Ridge in the Olympic National Forest. This is Mt Olympus, we thought Thor should see it. Now it's under cloud cover, we lucked out with a break in the weather.

This island, in front of the cottage is a bird and wildlife sanctuary. It's closed to the public. Tour boats and visiting boats must keep 200 feet away. One guy lives there as caretaker, Marty Bluewater. There are employees and volunteers that work there as well as the Jamestown S'Klallam Tribe
