"Coffee dehydrates you." It's a mild diuretic, but the water in the cup more than covers it. Regular drinkers barely notice any effect at all. Your flat white counts towards your fluids. You're welcome.

Washed vs natural, in one line each: Washed: the fruit is removed before drying. Clean, bright, precise. Natural: the bean dries inside the fruit. Heavier, wilder, fruitier. Same farm, same variety — two completely different cups.

Those blueberry notes in your Ethiopian coffee? Nothing is added. It's the processing: drying the whole cherry around the bean lets fruit sugars ferment into the seed. The flavour was grown and made, not flavoured.

Acidity is not sourness. In coffee, acidity is the brightness that makes a cup taste alive — the difference between fresh orange juice and flat squash. A coffee with no acidity isn't smooth. It's dull.

The world's second-largest coffee producer is Vietnam. Mostly robusta: stronger, more bitter, twice the caffeine of arabica. If you've had instant coffee or a cheap espresso blend, you've almost certainly had Vietnamese beans.

Gesha grew unnoticed in Ethiopia for centuries. Then a Panamanian farm entered it in a 2004 competition and stunned the judges — jasmine, bergamot, tea-like body. It's been the most expensive coffee name in the world ever since.

"Mocha" has nothing to do with chocolate. It's Mokha — the Yemeni port that shipped the world's coffee for 200 years. The chocolate association came later, because Yemeni coffee naturally tasted of cocoa.

Stop eyeballing your coffee dose. Start at 1:16 — 15g of coffee to 240g of water — and adjust from there. Too bitter? Coarser grind. Too sour? Finer. A £10 scale fixes more bad coffee than a £500 machine.

The 30 seconds most people skip: the bloom. Pour just enough water to wet the grounds, wait, let the CO2 escape. Skip it and the gas pushes water away from the coffee. Uneven extraction, muted cup.

Grind fresh or don't bother. Ground coffee loses its aromatics within minutes — the compounds that make it smell incredible are the first to go. Pre-ground supermarket coffee lost that fight weeks ago.

Your water matters more than your grinder. Coffee is 98% water. Brew with harsh tap water and even a £30 bag tastes flat. A cheap filter jug is the biggest upgrade-per-pound in coffee.

If your coffee tastes sour: it's under-extracted. Grind finer or brew longer. If it tastes bitter: it's over-extracted. Grind coarser or brew shorter. Every bad cup is a data point. Adjust one variable at a time and you'll dial it in.

The French press hack nobody talks about: After 4 minutes of steeping, don't plunge all the way down. Stop the plunger just below the surface. Plunging to the bottom agitates the grounds and makes your cup muddy and bitter. Gentle wins.

"Coffee dehydrates you." Studies show moderate coffee consumption (3-4 cups) contributes to your daily fluid intake almost as well as water. Yes, caffeine is a mild diuretic. But no, your morning coffee isn't dehydrating you.

"Darker roasts are stronger." Not really. Dark roasts taste bolder but actually have slightly LESS caffeine than light roasts. The roasting process burns off caffeine. The lightest roast in the shop is technically the strongest hit.

"Coffee stunts your growth." This myth started in the 1920s from a Postum (grain drink) ad campaign designed to sell more Postum. There is zero scientific evidence for it. None. It was literally a marketing campaign that became folklore.

Espresso doesn't actually have more caffeine than filter coffee. A single shot has ~63mg. A standard filter cup has ~95mg. Espresso is more concentrated per ml, but you drink way less of it. Filter wins on total caffeine every time.
