I also did pork katsu tonight. Homemade tonkatsu sauce is great (hummus is okay too) Happy I could get a good crust with relatively low oil because it's scary to fry with a lot 🍜 #food #cooking
Fry station. Have some pounded out thick-cut tenderloin, corn starch+ flour, egg+buttermilk, and panko+spices

I think I may have put too much non-egg in the egg mix but it still turned out wellCutlets being fried in a small-ish amount of oil. I usually do this in the wok but it makes me nervous because of the rounded shape. This is much saferCutlets all crisped up. I thought I overdid them a bit but they turned out goodFinal plating with cabbage, rice, and some katsu sauce (and hummus)

I got the katsu sauce recipe from Babish (Alvin) and never looked back. Oddly I have a hard time finding another katsu recipe that has fruit and isn't just ketchup+Worcestershire:

Spent part of the day boiling some chickpeas for hummus. I've got a giant tub of dried chickpeas from 2020 I'm trying to go through (it's so much chickpea...) Good hummus tho. We'll see how it is after it cools down 🍜 #food #cooking
The giant tub of chickpeas in question. This recipe is only about a cup of chickpeas 😐 I need to make more bean saladDried peas after soaking. Just a little baking soda and salt in waterBoiled for about 2 hours with some aromatics. The carrots and garlic and some of the onion got blended too

First time making rice balls using the power of love (kuromi x my melody rice ball maker). 3 flavors: chicken with tonkatsu sauce, egg salad, and classic tuna salad Real tasty but a little rice heavy (but I guess that's the point) 🍜 #food #cooking

Chicken with some homemade tonkatsu sauce. This is just regular cooked chicken mixed with it and some of them I added some cabbage. It was fine, but the least of the 3

Classic tuna mayo (tuna, mayo, and some spices). 

Egg salad (egg, mayo). Surprisingly really really good but maybe that's cuz I haven't had egg salad in a whileRice and the rice ball maker provided by my SiL which worked surprisingly wellAll the rice balls I could get out of 2 cups of dry rice. Pretty good for my first time, but I'm sure next time will go betterAdded some furikake. Later ate it with some fermented chili paste too 💯💯💯

Velveted chicken, a bunch of allium, carrots and red bell pepper. Only thing I'd change is cutting the carrots into rounds instead of doing a roll cutChicken has been blanched and seared and the alliums are cooking in the wok. I pretty much leave it on max heat the entire timeHere's the result pre-sauce. I always end up making a huge amount but we ended up eating more than halfDidn't get plate shots, but here's what was left over. Could have used more cornstarch to thicken the sauce

This post inspired me to go get some Ajvar and try it out It's pretty bitter, but I can also akin that to me not really liking eggplant. Gonna give it the ol' college try on whatever applications I can find, so guacamole today It adds a really nice flavor - maybe this is how I start to like 🍆
Azbar I bought at a local Euro mart. They had a surprising varietyUpside down pre-guacamole with a big glob of a Ajvar

I don't have a picture of it mixed because the color was so unappealing but it did taste good!

That said, I kinda just went for it. I added peas and a can of straw mushrooms (I recommend highly), and I used less roux and more water so it wasn't nearly as thick. I also always increase the veggies substantially and in this one I used a bunch of sage and tetragon which was a great flavor

I used a big onion, a whole head of garlic, and all the leftover onion in the fridge so it was....pungentSauce after cooking for 4 hours

Good tacos. Did trim q bunch of fat off the cheeks but that seems to be normal (I also made some pickled onion and radish) Eventually I might try a basic barbacoa with no peppers or onion or anything since I think that's how it's usually made with cheek meat 🍜 #food #cooking

Trying to use more varied proteins, so here's some Mexican (Spanish) lentils. They're Mexican cuz I used Mexican Chorizo instead of Spanish Surprisingly good. Goes great with Cheese and sour cream 🍜 #food #cooking
Mise en plais. Carrots and potatoes at the top; onions, bell peppers and leek (didn't have celery) at the bottom; a cup of lentils and seasonings

The recipe is from Kenji at this YouTube short. Made a short transcription below

Ingredients:
* 1 Spanish chorizo or sausage
* .25 cup olive oil
* .5 onion chopped
* 2 celery stalks chopped
* 1 red bell pepper chopped
* 3 garlic cloves sliced thinly
* 2-3 carrots with a roll cut
* 1 tbsp tomato paste
* .5 tbsp smoked paprika
* 1 bay leaf
* 1-2 gold Yukon potato cubed
* 1 cup lentils
* 1 quart water or chicken stock
* 1 tbsp Sherry vinegar (or any other type of vinegar)
* Salt and pepper to taste

Garnish:
* Parsley
* Avocado
* Crema or sour cream
* Cheese like cotija

Instructions
1) chop Spanish chorizo and add to a hot pan with olive oil for searing

2) remove chorizo (leave oil) and toss in onion, celery, pepper, and garlic. Simmer for 5m

3) add in tomato paste and smoked paprika and cook for 2 minutes to cook out raw tomato flavor

4) add lentils, carrots, potatoes, liquid, bay leaf, and cook for 20m

5) add chorizo back in and add a splash of Sherry vinegar and parsley at the endSauteing the vegetables as the Mexican chorizo waits nearbyCooked soup all together. Has a great stew-like consistencyBowl with some jasmine rice. Goes great with sour cream and cheese and would probably also go great with avocado

So I had a watermelon at home and my wife bought a watermelon on the side of the road while she was out so now I have a shitton of watermelon and agua fresca. My fridge is too full 🍉😐🍉

Made the tandoori chicken. Flavor's great, though it's a little dry (owing to the white meat). Of course, if I turn it into butter chicken dryness is no longer an issue Honestly it seems like it was a good amount of Greek yogurt. I saved the juice after broiling for....something 🍜 #food #cooking

Finally back to do some cooking, and I made some Kenji salmon chowder. Basically clam chowder with Salmon instead. Made this partially because my wife and her sister like bread bowls Real tasty; I don't really like clams, but this was great with cubed salmon. 🍜 #food #cooking

Making Mexican beans and rice today. The beans I freeze and eat for breakfast and they came out great The rice... I tried making it with brown rice instead of jasmine to see if it worked (heretical I know) and the texture is shot. I'll experiment some more... 🍜 #food #cooking
Frying up the rice with veggies, and the beans are almost done (started them earlier)Added tomato sauce and about to add the liquid. Beans are just boiling down a bitBeans taste better than ever and are ready for the fridge

The rice is effectively porridge but the taste is okay (maybe a bit oversalted)

I upped the water but I probably upped it too much. This pot doesn't lose a lot of water after all when the lid is on

I'm just trying to see if I can get brown rice to work for the slight nutrition boost. I'll give it a couple of tries and give up if I can't get it to be enjoyable (I don't have high hopes)

Got a new big enamel dutch oven as a gift, so I celebrated with beef stew. Took longer than suggested in the recipe for the meat to be tender, but still very good and honestly not really a difficult cook 🍜 #food #cooking

Recipe (I recommend 2.5 instead of 1.5 hours for the first cook if you're using chuck):

Veggies on the right have been sauteed a bit for flavor, but won't get added for another 1.5 hours. This was the final stew after an extra hour or two. Next time I'll let the beef go for longer first...Here it is after the normal 2.5 hour cook time. Even though the meat was a little  tough it still tasted great

Finally did some cooking after a week of cleaning. Salmon, sweet potato gnocchi, asparagus, and some quick rolls As usual, gnocchi and bread needed more salt, but overall turned out very well. I'm glad the gnocchi turned out at all since these were very wet sweet potatoes 🍜 #food #cooking

Still need more salt though - next time I'll probably do a full tablespoonSalmon and asparagus. The asparagus is just cooked in a pan - super simple. The salmon is surprisingly good - just throw a bunch of stuff in the pan and 10m later you've got salmon and a sauceRolls and gnocchi. The rolls had a great texture and  just needed some salt. The gnocchi was a little bland and part of the problem is that I tried to sautee them in a saucepan instead of a skillet so the butter sauce didn't really come together correctly

Nice meal for the family: salmon fillets, sweet potatoes, and a salad with carrot ginger dressing! Turned out very tasty. Salmon was a little overcooked, but my wife gets really antsy about temps so I overdid it a little bit 🍜 #food #cooking

Made some Cajun chicken pasta tonight, but the fam is firm that the kingsford Cajun spice is too spicy. It's a shame because it has by far the lowest salt and it smells amazing while cooking. Aside from that it was good and I made some cookie dough for later too 👍 🍜 #food #cooking

Red beans n rice. I used some older beans so they turned out less tender than I'd like but it was still good I do think it was a mistake to add the andouie sausage too early though. I'll add it toward the end next time 🍜 #food #cooking

Maybe the jelly could have a little more structure which I might even consider using gelatin for. The cake was also still a little dense but it was very good. Next time I think I'll try adding more freeze dried strawberries

I bought higher quality flour and new baking powder and I think that's part of the reasons these worked better

I used the above recipe with some adjustments
350g flour instead of 400
Added in about 25g of freeze dried strawberries
Added in about a tsp of strawberry extract
When missing in the buttermilk is when I add in the strawberry powder
Cakes out of the oven! I'm not sure yet if they have enough strawberry flavor but I didn't want to overdo it with the strawberry extractFrozen strawberries to be made into some filling

I only had 1 lb of strawberries so that's what I used. I also used only 1 tbsp of cornstarch. 2 seemed like a lot...Final strawberry filling waiting to cool down for tomorrow

Pickled mustard greens, ginger+garlic, green onion, miso paste and sugar, and some alcohol and corn starch
