wanna make more but mascarpone is expensive. ppl say to sub it with other dairy products like cream cheese, whipped cream, greek yogurt, cottage cheese... besides being inauthentic, they all just feel bad. like I'd try it but I wouldn't want someone else to (and I always cook with others in mind)

• stir fried veggie noodles, fried tofu, and gyoza
• shepard's pie and caesar salad
• veggie tofu udon with veggie gyoza
• rice, silken tofu egg drop soup, blanched spinach and boiled potatoes
• fried rice, fried tofu, and steamed veggies
• vegetarian patties, apple cheddar biscuits, mashed potatoes, and steamed veggies

• greek yogurt flavored with honey and vanilla, and served with fruit jam
• veggie burger wraps
• creamy spinach lemon pasta
• make mashed potatoes and store in advance
• use leftover cauliflower
• roasted butternut squash soup and/or butternut squash mac n cheese
