Once you understand the corporate culture of AI "hyperscalers" consists primarily of everyone cooking their brains by locking themselves in the bathroom, holding flashlights under their chins, and saying "Aaaaaaaaaay Eyeeeeeee" until they wet themselves in terror, a lot of things snap into focus:

t was a perfect day for a blood meal. A salt breeze blew over the western shore of Martha’s Vineyard, riffling the meadow grass under a pale-blue sky. They’d been waiting by the footpath all afternoon, crouched in the shade of a windswept cedar. They didn’t do well in the sun. They’d spent the winter half asleep, in the moist, rotting leaves under a huckleberry bush, well away from other creatures. But they were hungry now, as they always were in the spring. They’d scuttled out into the open air that morning and were sitting side by side on a blade of switchgrass, their tiny teardrop bodies barely bending it down. Their back legs gripped its serrated edge while their front legs reached toward the path, waiting for a warm body to lumber by. They looked like children at a Macy’s Parade, leaning out to touch the Snoopy balloon.

Here's a longer timeline. Poverty dropped a lot from the 60s but it's gone up and down since, with a record low in 2020-21 then a spike to 1965 levels in 2022-23! Of course poverty is only one measurement. Many people who are struggling aren't below the poverty line. ourworldindata.org/poverty

I haven't made latkes in forever (low oxylate diet) but this is how I did it, so it's pretty simple:
Recipe: Latkes (Potato pancakes)

About two medium potatoes.
An onion. You want at least a forth of the resulting batter to be onion, but you could probably even do 50-50. But a forth to a third is probably best.
An egg. Maybe two; put one in and see how it looks.
Matzoh meal. Or bread crumbs. Can also use flour.

Send potatoes through food processor. I use the smallish grater, which is the only grater I have. I wouldn't use the large grating holes of a hand grater.
Squeeze out potatoes with potato ricer. Toss them in a medium bowl.
Send onion through food processor.
Throw in bowl. Mix potatoes and onions together. Break an egg in. Use a second if it seems necessary.
Throw in a couple of tablespoons of matzoh meal.

Stir everything together. Sprinkle with pepper and a little salt.
Put some oil in frying pan. Make patties in pan. Cook around six minutes on medium. If they've browned, flip and cook another three or four minutes.

Serve with applesauce.
