From the chef: There's a real satisfaction in sorting a snack board instead of just dumping everything in the middle of the table, and that's the trick I built this one around. Elemoots is such a good mashup of elements and moots that I wanted the food to actually behave like a chart — bites grouped by flavor family, little cream cheese tags standing in for atomic symbols, gaps left on purpose where a family doesn't belong. I did something close to this for my sister-in-law Renata's graduation cookout, sorting the deviled eggs and pickles by "reactive" versus "mild" just so my brother would stop hovering over the tray, and it worked so well I never went back to a plain platter. This one leans savory-metal heavy in the middle with the sweet stuff tucked in its own corner, same as the real thing keeps its noble gases off to the side. From the chef: Now here's a build that starts small and works its way out, kind of like nesting mixing bowls before you put them away. My sister's boy Dmitri was trying to explain his computer science homework to me over Labor Day — something about a function that keeps calling itself until it finally hits a spot where it stops — and it clicked for me the second I pictured a lasagna baked inside a lasagna inside a lasagna. So that's the plan here: a little four-inch lasagna gets fully baked first and that's your stopping point, then it rides inside a medium pan of more noodles and sauce, and that whole thing rides inside the big nine-by-thirteen for the table. Same meat sauce and cheese filling feed all three, just portioned out as the pans get bigger. When you finally slice down the center you get tidy nested squares like rings in a tree stump, and nobody believes there's a whole little dinner hiding in the middle until you cut it open.

So we're doing this in three moves: a tart mango sorbet heart frozen first so every bite has a surprise center, a rich no-churn mango ice cream body poured around it, and a white chocolate shell split into two bowls and dip-blended so the shoulders go orange-red into a yellow-green belly, same as the fruit on the vine. I made a version of this for my sister-in-law's retirement party a couple summers back using egg-shaped candy molds for the hearts because that's what the church rummage sale happened to have, and it worked like a charm. From the chef: Coals are just about grey now, and I've got a good idea brewing for these Jevburgers. Way I figure it, if folks want to sit down and pick an answer off a multiple choice screen, they oughta be able to do the same thing with their toppings — so I'm setting up four little stations, lettered A through D right on the board, each one arguing for a different kind of burger. Smoky bacon and caramelized onion, a spicy pickled jalapeno kick, a tangy BBQ and crispy onion crunch, or a cool garlic aioli with peppery greens — you grill one great patty, then everybody at the table answers the same question their own way. Made something close to this for my brother-in-law's fantasy football draft party and by the third round guys were arguing over which letter was the "correct" one, which I figure means it worked. Nothing fancy in the meat itself, just good beef, hot grill, and a little patience — the fun's all in the multiple choice.

From the chef: Fair point, fair point — a fella can't go around whipping up freeze-dried crystals when there's a whole pot of good coffee sitting right there on the counter. So I pulled the instant jar clean off the counter and did it the honest way instead: brew it strong, then simmer half of it right down into a thick little coffee syrup, the kind with real body to it. That concentrate whips up into cream just as billowy as any instant foam ever did, only it actually tastes like coffee instead of astronaut rations. Everything else about this one stays put, because the scallion syrup and the three stacked layers were never the problem — the shortcut was. Still sweet, still oniony in a way that somehow works, just built on a proper cup of joe this time around.

From the chef: Physics was never my strong suit, but I know two things that shouldn't sit too close together: dark meat glazed jet black and light meat glazed pure gold, staring each other down on the same plate. This one plays it dead straight - one side of the bird gets a honey-lemon lacquer till it shines like a headlight, the other gets squid ink and charcoal till it goes matte as a chalkboard, and right at the table we pour warm rum down the seam and touch a match to it. That little flare traveling the dividing line is the whole point - matter meets antimatter, everybody at the table gasps, and then you've just got a real good roasted chicken sitting there like nothing happened. My brother-in-law Denny about fell out of his lawn chair the first time I ran this trick at his retirement cookout. Nobody at the table needs to know how simple the actual science is.

From the chef: Pulled the paella pan clean off the burner for this round — turns out these little pies were doing all the heavy lifting in that dish anyway, so we're letting 'em stand on their own two feet. Same peanut butter and marshmallow fluff tucked into a half-moon of pie dough and baked till it puffs up golden, but now instead of drizzling that key lime filling over a hot pan of rice, we're dunking the warm pies right in it while they can still soak up a little of that glaze. Around it I built out the rest of the rig: a charcoal wafer for the board, a gray tahini thermal paste piped in a grid, blue coolant cells, and a honey-turmeric glaze pooled up like it leaked right out of the joint. Silver dragées scattered on for loose ball bearings and torn silver leaf for the solder finish it off. This one's heavy, it's warm to the touch, and there's nothing cutesy about it — that cube is the main course, full stop.

From the chef: Spatchcocking is the whole secret here — you cut out the backbone, lay that bird open flat like a book, and every square inch of skin hits the hot pan at once instead of the top browning while the bottom steams. I'm not wasting that backbone either, it goes straight into a little saucepan to build stock while the oven comes up to temp, so by the time the chicken's done, I've basically got chicken flavoring chicken flavoring chicken. Made a version of this for my sister-in-law Paula's retirement potluck and watched three grown men fight over the schmaltz potatoes underneath the bird, not even the meat. From the chef: There's a particular grey in an e-reader screen right before it flips a page — that grainy, papery, almost-static grey — and it's been rattling around my head as a flavor for a while now, so this one's a checkerboard mosaic cheesecake built out of little frozen cubes instead of one poured batter. Half the cubes go stark white with white chocolate and vanilla, half go deep charcoal-black with black cocoa, and you piece them together like tile work before the whole thing sets up solid. I dust the top through a sieve so it comes out matte instead of that glossy magazine-cheesecake shine, because a screen never has a shine on it, it's got that soft flat haze. Made a version of this for my brother-in-law Pete's retirement party after forty-one years running the same mail route, and he made everybody guess what the pattern was supposed to be before he'd let anybody near a knife. The graham crust runs thick around the edge like a bezel and thin in the middle, so what you're really building is a little screen you can eat. Parked Design Nuggets. Buttermilk-brined chicken nuggets, breaded golden and held warm on a rack instead of rushed to the table — good ideas kept in reserve, not lost.
