Respectfully, I read the method in this link and there was no mention of frying. The crispy crust comes from roasting at a high temperature or using the broiler. Also, maybe the traditional method involves frying but this link explicitly states this isn’t a traditional method.

It might be Puerto Rican pernil. Carnitas isn’t usually served with the crispy skin. Also both of those dishes are roasted, not fried.

I wasn’t trying to make fun, just a general watch-out :) Mac: in most apps, if you press down on the “n,” a little menu pops up and you can select ñ. (works for other diacritics) PC: it’s probably alt-something but I could never be arsed to memorize it, I just copy-n-paste from Character Map.

Spanish speaker here. That ~ on top if the n in “año” (anyo) is super important. Otherwise you have a dog that has four and a half anuses (ano). 🤭 Also, it’s “feliz año nuevo.” Don’t wish a Spanish speaker a happy new anus.
