my first sourdough loaf ever! did i have a bread basket? no. did i have a bread lame? no. did i have to borrow a dutch oven from my friend? yes. it's a wheat/rye mix (very traditional in this country actually) bc i couldn't find 100% wheat bread flour anywhere. i think it came out alright!

RECIPE TIME ❄️ Winter Moons 🌙 One of the many kinds of traditional Czech Christmas cookies. They’re called something entirely different in Czech but I took some artistic liberty with the translation. Happy December 1st 🌲

Recipe for Winter Moons (vanilkové rohlíčky, a traditional Czech Christmas treat).

Ingredients:

150 g all purpose flour
20 g powdered sugar
110 g butter (cut into cubes)
1 egg yolk
50 g ground almonds
1 pocket (~10 g) vanilla sugar (can be subbed with 1 tsp vanilla extract)
1/2 tsp dried lemon zest
Extra powdered sugar mixed with vanilla sugar to roll the warm moons after baking

Instructions:
Prep:

1. Dump dry ingredients onto a surface (sift the flour and sugar), add butter, make a dent in the mixture and add the egg yolk

2. Knead to make dough (should not be sticky)

3. Shape dough into a ball, put on a clean plate, wrap in cling film and put in the fridge (we usually let it rest in the fridge for about two weeks)

Baking:

1. Preheat oven to 160°C (320°F)

2. Let dough warm up to room temperature

3. On a clean, floured surface cut the dough into smaller pieces and roll those into long cylinder shapes (~5 cm in length, ~1-1,5 cm in diameter). Bend each into a crescent moon shape

4. Bake until light golden brown

5. Meanwhile prepare a big bowl with powdered sugar and vanilla sugar mixture

6. After taking the tray out of oven, let rest for about 2 minutes, then roll the still warm (but not overly soft to the touch - they would break) moons in vanilla sugar mixture. Transfer onto a clean tray and let cool completely

7. Store in a tin or a plastic container for up to 4 weeks. They taste best after having been stored for some time.
