Also, unpasteurized is not the same as raw honey. It is still heated up slightly, but not to the pasteurization point.

So, I was curious, and looked it up. Pasteurizing honey is more for letting it keep the translucent and liquid texture. Unpasteurized does have some additional nutrients, but will crystallize faster. So the pasteurization was more for shelf life as a squeezable liquid it seems.
