One of the bits of #biochemistry that never ceases to mesmerize me is #fermentation. You take a bunch of yeasts and lactobacilli naturally present in the air, flour, water and your hands, you give them some love & carbs and BOOM: a soft, spongy loaf smelling like heaven 🥖💖🤤
