Do you chicken brissil? If you are from Greenville in Butler County, Alabama, you do. It’s a smoked chicken with an emphasis on a tangy vinegar sauce. I was so glad to talk on Alabama barbecue to the Butler County Historical and Genealogical Society. It was such a great audience!
Smoked Chicken, Chicken BrissilThe crowd gathered for the lunch and talk.A Newspaper Article. “One of the favorite outdoor sports in Greenville now is chicken brissil,” says Birmingham News in 1930Newspapers from Greenville Advocate in Alabama in 1910 and 1913

I pulled this from some jerk over on Threads, While I don’t know the race of the server, I thought this was a good time for a reminder that tipping culture is unique to the United States and a legacy of systemic racism! #foodstudies #food #history

We have pan-seared swordfish, fried eggplant, and roasted corn. Also homemade baguette and basque red wine. These will be slathered in olive oil, butter, garlic and oregano. #hatm

Two years ago tonight, my students and I put a whole hog in a smoker. Tonight, I’m rubbing down ribs to cook for a student group and end-of-the-year party.

No I’m not drinking on Monday morning (yet) but I forgot to post last night’s wine and reading material. I’m hoping to integrate this into my thoughts on bacon and sex. I’ve been looking forward to it for a long time, and so far, it pairs excellently with the weather and this wine.

If he doesn’t beg for food, I’m insulted. This is Frank Stitt’s low country red rice with a piece of red snapper pan cooked in bacon grease.

I’m getting back to work today but capping it off with the rest of this book and a sidecar. Also, this book makes much more sense than a world in which white men “rawdog” their flights to invite pain amid otherwise safe and comfortable lives. What about the people who don’t need to invite pain?

These new-to-me books arrived today. I’ve read the TJJL book and the Matejowsky book, but I now needed copies of my own to mark up and annotate. As for James, anyone out there in my world read it yet?
