Made the most delicious hash browns! 🥔😋 Russet potatoes peeled & boiled whole for only 10 mins, cooled & grated. Added garlic & onion powder, sweet paprika, salt & pepper, 3 Tbsp potato flour, lots of nooch! Deep fried 🤤 Such a simple thing & sooo good!👌🏻 #vegan #plantbased #budgetcooking

Last night's dinner: green risotto -> onion, garlic, 5 "cubes" frozen spinach (defrosted & blended) & lots of green peas (frozen too)👌🏻 Made with veg stock, seasoned with dry mixed herbs & lots of nooch! Hello! Lunchbox 🍱 game is still going strong! This weekend's cake is Polenta berry cake 🫐🍓 recipe from "Forks over knives" site. Had to adjust slightly, as didn't have apple puree & I used frozen mixed berries plus fresh blackberries from our garden. Good morning all! 🌻 It's #caturday but our lovely, old lady is getting more fragile by the day... 😿 She's at least 14-15 years old, "found" us only 2 years ago. She has cancer, no teeth left, but we're looking after her as well as we can! She stole our hearts 💕 Dreading the future without her...

Tonight's dinner: I tried making #vegan okonomiyaki 🥬🥕 The flavour was there, absolutely fantastic, also made tonkatsu sauce to go with it 😋 but the consistency wasn't right, very soft, too soft 🤔 Don't think I have stove strong enough to fry it really nice & crispy 🤷🏻 #cooking #trialanderror

Right now currently in our bedroom - where the window is wide open everyday(!) & you would think there's constant airflow 🤷🏻 It has been warm, but humid summer so far. I hope it will improve further in July & August. We're thinking of buying big standing dehumidifier for the house, we had one before.

It's expensive to travel between the USA & Ireland - you would think that with so many family ties etc they would make it more affordable... Ireland is indeed beautiful, especially the south west part, but I'm biased 😉
