This is only happening with the newest ones. But even the old ones process too much. They look very fake to someone used to SLRs.

iPhone has always over processed the images since day one. There is a raw mode though. But the image size fills your memory pretty quick. All new phones do this by the way. So, do some research before buying. I think the lack of iso or exposure time settings is even bigger issue with the iPhone.

It seems to fabricate content where resolution, noise or bokeh is hiding it. I first noticed it with trees where fake leaves or pine needles were added. Interestingly, bluesky’s lower resolution improved the image quality because it reverses some of that unnatural sharpening.
