I had some veggie friends over for dinner & I made a pumpkin sage risotto but subbed farro for arborio rice. It honestly put every other risotto to shame (the toasted farro added beautiful complex flavour) & I didn't have to stand there stirring it for an hour! 10/10 recipe hack.
