An a5 wagyu beef with extreme marbling and gelatinous mouthfeel can be as off-putting to some as a smash burger is to others, so fat retention isn't the only factor at play. Unless you're crushing it down into lace like some places do (Ill concede some take it too far) you're not losing THAT much fat 110
