So then I started looking into how a database stores time. And I got mad. What do you MEAN the datetime object IGNORES TIMEZONES IN STORAGE, BUT DOESNT IGNORE THEM AND STORES UTC WHEN INSERTING THEM So I half assed a conversion from object to string that removes the mention of timezone entirely

So then i said "well if I cant find why this line doesnt work, lets just change it to use local time instead of utc, it's probably the database only saving the date time and not the time zone" Didnt work, the bug seems gone (again, very volatile, cannot reproduce) but the time was completely fucked

Now, my brain is small, and the error is that the minutes go out of range, which shouldnt be possible at the rate it's happening (we get that error like 2 times a week with around 30 users) So I decided to just, test every second of a single day to see what would happen. No bug at all.
