Here's a real world example: I originally hard coded my fish species with a human friendly string. Ex: "Smallmouth Bass" Later during development I realized It makes more sense to have its own table. Here's a patch that adds `species_id` and removes `species`.

ALTER TABLE fishing_trip_catch ADD `species_id` text REFERENCES fish_species(id);--> statement-breakpoint
UPDATE fishing_trip_catch SET species_id = 'bass_smallmouth' WHERE species = 'Smallmouth Bass';

I use sql migrations. I have a simple folder with straight sql files for schema changes. (They are randomly generated names lol)
