Forgot to post my #52weeksofcooking submission for last week! This was for "lost in translation" and I made pain perdu, a dish that literally features the word "lost" in translation. I made my own brioche for this too! #foodsky 🍜🍽️ niamhhallam.substack.com/p/pain-perdu...

Remember the bacon craze off the 2010s? It was gimmicks week on #52weeksofcooking, so I relived those days with bacon everything. I particularly enjoyed my maple bacon mini cheesecake and SoCo Sow-er with bacon salt rim. Epic. 🍽️🍜 #foodsky niamhhallam.substack.com/p/everything...

It's challenging to do a gardening theme for #52weeksofcooking when you don't have a garden and can barely keep a cactus alive. But I found my inspiration in Bavarian beer garden food: brezeln, obatzda, wurstsalat and radi. Das ist ja toll! niamhhallam.substack.com/p/biergarten... 🍜🍽️ #foodsky
A wooden table set with a Bavarian-style spread: two large glossy pretzels on a plate, a bowl of orange‑tinted Obatzda topped with thin slices of red onion, a plate of neatly spiralled salted white radish, and a bowl of Wurstsalat made from sliced sausage and pickles. Beside the food are two German beer bottles—Franziskaner Weissbier and Erdinger Dunkel—and a glass filled with pale amber beer.

Tonight's dinner 🍜🍽️: Breakfast burrito, an American classic. Spicy sausage (I used chorizo), scrambled eggs and avocado salsa, all wrapped in a wheat flour tortilla. A deeply satisfying dinner. This would be absurd for breakfast though! Recipe from: www.onceuponachef.com/recipes/brea... #foodsky

Tonight's dinner 🍽️🍜: Asado de bodas con arroz rojo. A rich pork stew from Zacatecas, Mexico, served with Mexican red rice. The depth of flavour here is incredible. Absolutely beautiful food. Recipe from: www.maricruzavalos.com/asado-de-bod... and www.recipetineats.com/mexican-red-... #foodsky
A green‑rimmed plate with a geometric floral pattern holds two contrasting dishes. On the left is a dark, glossy portion of Asado de bodas—tender chunks of meat coated in a thick, brick‑brown chile sauce with a slight sheen, finished with a scattering of chopped herbs. On the right sits a mound of arroz rojo, its grains loose and bright orange, also topped with fresh herbs. The colours—deep brown against vivid orange—stand out sharply against the patterned plate and wooden table beneath.

Coffee is such a great theme for #52weeksofcooking. Lots of great dessert options, so of course I made a salad. Coffee/soy cured egg yolk, coffee glazed tofu, coffee/orange vinaigrette, and lots more! Genuinely delicious and super fun to make! 🍜🍽️ #foodsky niamhhallam.substack.com/p/salad-with...
A red ceramic plate holds a carefully arranged composed salad. There are glossy slices of deep‑purple beetroot, thin shavings of pale fennel, and small cubes of coffee‑lacquered tofu. A soft, amber‑coloured cured egg yolk sits near the centre. Scattered elements include caramelised walnuts, sesame seeds, and orange‑marinated button mushrooms. Everything is arranged with fine‑dining precision, with contrasting colours and textures creating a balanced, modern presentation.

A deep white bowl holds a thick, rustic farinata di cavolo nero e borlotti. Tender borlotti beans and wilted cavolo nero leaves sit in a glossy, amber‑brown broth. The bowl rests on a richly grained wooden chopping board with a carved groove, giving the scene a warm, homely, freshly‑cooked feel.

This week's #52weeksofcooking theme was "braising", so I returned to a dish I made three years ago: Red-braised pork belly. Silky, unctuous pork with a sweet, salty, deeply savory glaze. So good! niamhhallam.substack.com/p/chairman-m... 🍜🍽️ #foofsky
Photo of a small bowl of red-braised pork belly. The pieces of pork are covered in a rich, sticky glaze that's almost mahogany in colour. Behind there are two more bowls, one with rice, another with stir-fried choy sum.
