2 big dagwood style sub sandwiches with several meats, melted provolone cheese, tomatoes, lettuce, and sauce. The angle is an attempt to accentuate the sandwich filling, and length of the sandwich. They are baked, and so am I.

We're calling this "Eggplant Ceasar". If ever a sauce would be classified as "zesty" it's the hybrid ceasar dressing we baked onto these scored eggplant slices. Pairing these with mango chicken and some potato wedges that I can't quite describe other than "good as fuck". 🍽

Not only did the grocery store not have panchetta, they didn't have peccorrino romano either. So I cubed a pork belly, and used the best parmesean I could find. It's not grainy, and there's no scrambled eggs in it, so I'm happy. Successful carbonara. 🍽

Spaghetti alla carbonara to the best of my resources aka cheesy noodles with pork belly. Nothing flashy, but damn tasty.
