Porkbelly of our own astur celta pig. Prepared sous vide, afterwards for a bit in an oven. Served with white rice, green asparagus and spring onion, and a sauce of hoisin and fermented black beans. 🍜👨🏻‍🍳

Szechuan food, the starter with a local (asturiaan) twist; bocartes in crispy chili cured in dumpling Vinegar. Also hot and sour potatoes, crispy chili chicken but with oyster mushroom and saffron gelato. Not pictured is the fish fragrant eggplant. 🍜🍽️

In the upcoming days we are moving from our temporary house to our new home. It has this wonderful cocina de leña, that heats the kitchen, supplies hot (boiling!) water, functions as an oven and stovetop. And looks amazing.

Er bij, forse scheut maple syrup, wat rasp van citroen, en wat sap of appelazijn, olijfolie. Dit mengsel is je dressing. Appeltje fijn snijden, wat rozijn en droge cranberry, en flink wat walnoot. Op foto met Hazel, met walnoot was lekkerder.
