Covered them in mayonnaise to get a brown crust, butter basted them in a super hot pan with canola oil, butter, rosemary, garlic and thyme, rested and topped with Maldon finishing salt. Server with a sauce made with balsamic, ketchup, dijon mustard and honey. Beautiful med rare/rare
