A console is just a computer. You can plug in a console, phone, PC, Steam Deck, whatever else to your TV. So please explain to me, how is it that still having several different options to play the same video games can be a monopoly but having only one to play a specific video game isn't?

I don't agree that it makes it not monopolistic because you can buy a different thing that does something else. Further, if we accept that you can, then your point is wrong because that means PCs and phones would prevent Nintendo from having a monopoly.
