I am going for a crisp, apple-forward pét-nat that I will finish with 1116 for some fine bubbles and light esters, off dry. In this video, I am racking off the lees into the secondary vessel, another perfectly sized 3-gallon Italian glass carboy that makes almost exactly one case: 12 oz or 750 mls.

Primary fermentation on this year's Yard Cider (6% ABV). This is mostly Newton Pippin from a friend's tree with a bit of his Golden Delicious. I also added a bit of Hewes' Virginia Crab and Harrison on over-pitched AVB-1 to preserve malic acid.
