For reasons of portion size, today’s baguette challenge (sixth attempt) has been changed to “baguette rolls” using the poolish method. At 100 grams a pop, these have turned out really well, and at 195 kcal apiece, eating two won’t break the (calories) bank.

I forgot to post this - baguette challenge the fifth: sourdough method, T65 flour. Very open crust, very tasty, very chewy. The best lot so far - I think getting the T65 flour was a good call.

Baguette challenge, the fourth. Still type 550 flour, different recipe with overnight poolish and prolonged proving before shaping. Still a motley crew shape-wise, but getting better. Next time, same recipe but with the ney arrived T65 flour.

Baguette challenge, part the third. Same recipe as 2), but dough divided into 8, not 4. Still, each mini baguette is almost as big as the previous lot. Much better rise, crumb more open and irregular - exactly what I aimed for. Slightly different method (autolyse, overnight proving in fridge).

This is how it started. Ankarsrum recipe. Verdict: a bit too tight, also Typ 1050 flour a bit too dark.

New challenge: bake decent baguettes. Second attempt: Richard Bertinet’s basic recipe from his book “dough”. Verdict: Not quite risen enough, despite a decent kitchen temperature. Either the yeast dosage is too small, or the timing is off, or the yeast isn’t lively enough. Try again.

Celebrating our 10th wedding anniversary - nice breakfast, 90 minutes group ride with friends on Zwift, skipped lunch, 45k outdoor ride with ice cream, bottle of pop, later spaghetti carbonara and more pop. Normal, yes? ❤️

On closer inspection, much of the yellow is wind - and Hohen Neuendorf, where we are, is in a little pocket of Wind among the snow. So instead of a bit of white, there’ll be more leaf litter for me to clear up. We’ve taken a trailer load (200 kg) of the stuff to the tip only yesterday.

There may be weather ahead, how exciting.

February - yeah, that’s actually not unlikely. (Not a hint of snow in Northeast Germany today, either. Sorry.)
