I used to cook once a week on sunday night. Do it for a few weeks and you always have variety in the freezer. Except my taco buffet. I'd always make that fresh, and only for a party.

Leek and potato soup: 5 pounds potato, washed and halved. 1 bunch leeks or 2 bunches green onion, washed, sliced into small chunks, and washed again. Dump in big pot, cover with chicken stock or vegetable stock. Place lid, simmer for an hour or two on low. With immersion blender, blend until smooth.

Use prepared ingredients. Supermarkets will have the stew beef pre-cut. Wash the finger potatoes and use them whole. It's like a bag or two of baby cut carrots, or you can use canned. (Drain it.) Use frozen haricots verts. Use pre-made beef stock. Use instant mashed potato flakes. Make it easy.

It was one of my meal prep recipes. Never cook for one: always cook for 12, eat one portion, bag the other 11, and put them in the freezer. You only have to cook once a week, and soon all your friends learn that if they visit you have a selection of home cooked meals you can heat up for them.

5 pounds finger potatoes. 5 pounds cut stew beef. 3 pounds cut carrots. 2 pounds pearl onions. A bag of frozen haricots verts. Add to crock in that order. Pour beef stock in to cover. Sprinkle liberally with instant mashed potato. Cook on low for 6-7 hours. Stir before serving. Salt/pepper to taste.
