Update to the vegan crabcake adventure: adding some Just Egg and less mayo, swapping panko for crushed Ritz, and using no extra oil for cooking was a win. PERFECTION tonight.

I tried making a vegan "crabcake" in the style I ate growing up. Didn't have an appropriate binder so it didn't stick together :P It's made of shredded lion's mane mushroom! Very, very tasty and I wanna try doing it again soon 💜
