I once ruined a 5 pound batch of Puerco Pibil because I used fresh squeezed citrus juice and they were super pithy. Made it so bitter it was inedible. It was one of my go to freezer meals and I’m still so sad about how it turned out. I haven’t made it since 😢😭 110
