In 2018, Elemi, a small restaurant in downtown El Paso, revolutionized Mexican food in Texas. This January, Elemi got a little sister, Taquería Elemi, which I named it one of the 25 best new taco joints in Texas. Now, the NYT got wind of it. Is it still good?

While a truly well-made nixtamalized corn tortilla is worth the effort and price, it just isn’t feasible for a majority of taquerias. A great taco doesn’t hinge on one specific tortilla-making technique. If it did, my biennial lists would be very, very short. www.texasmonthly.com/food/homemad...

Thirty minutes ago as I was leaving my hotel in Amarillo and when the automatic doors opened I was greeted by the familiar aroma of my abuelo’s mountain farm: cow dung. The front desk clerk said the smell is from a ranch an hour away. I forgot how flat the Panhandle really is.
