Stripe's Swedish Classics today is Smörgåstårta! Sandwich Cake. It's a savoury layer "cake". The cake part being white bread. It has various fillings and toppings. This one has a tuna-mayo mix, and egg salad. Topped with egg, shrimp, lemon, green stuff. Icing's a mayo and creme fraiche mix :D

On today's episode of Stripe's Swedish Classics, it's a hearty beef stew called 'Kalops'. Stew simmered low and slow, and seasoned with allspice and bayleaf. And yes carrots! Served with boiled potatoes and pickled beets.

Biff a la Lindström! A classic Swedish dish consisting of patties made with pork and veal, and inside is capers and pickled diced beets. (And sometimes dijon mustard is added). Served here in one of many ways, mashed potatoes and parsley butter. May not sound like much but it's one of my favourites.

Sticky sake-dark soy(from small brewery on Miyajima island >:D) and ginger sticky chicken over steamed rice and a smashed cucumber salad. :D Should note the soy sauce was brewed with Hiroshima oysters so it's packed with a lot of umami with a touch of the oyster flavour.

So here's a delicacy from the Swedish island of Gotland. It's a Saffron 'pancake' with salmonberry jam (also from Gotland) and lightly whipped cream. The cake itself is short grain rice cooked in milk and saffron which later has cream, almonds, salt, honey and eggs added.. and then baked :D.

Guten Tag! Ich habe ein schnitzel in mein lederhosen! Silliness aside.. Breaded veal cutlet, leftover potatoes(bratkartofeln) fried in butter with thyme and onions. Chanterelle cream sauce, steamed peas and the obligatory wedge of lemon.

My take on a Danish classic. Stjerneskud (Shooting Star) (Google the original if you want) Toasted flatbread, breaded and fried flounder fillets, a wasabi and avocado dressing, poached asparagus, lots of little shrimpies, tomato, cucumber, lemon wedge and freshly ground black pepper. Hecking nom.

We had a seagull baby with an injured wing at work and so I capture it and call the animal rescue service and they come to pick it up to treat its wing :3. Yay for saving baby birds.

On today's menu in Tiggys House: Albondingas! (Or Spanish meatballs) I used minced pork that I seasoned with parsley, garlic, Spanish paprika, manchego and chorizo. Served with saffron rice and a tomato sauce with peppers, onion, garlic and juuuust a hint of saffron. Sprinkled manchego on top.

On today's menu we have linguine with sautéed asparagus, tossed in brown butter and parmesan. Topped with crispy prosciutto, toasted pine nuts, more parmesan and a poached asparagus. Was damn good!

Turkish köfte kebabs (made with veal) on top of grilled slices of aubergine. Served with a couscous medley with onion, carrots, parsley, apricot, feta and kalamata olives. Homemade spicy hummus and homemade tzatsiku.

Here's a new invention of mine. Crispy chicken burger, chicken was breaded with panko and spicy curry powder. It's also got a homemade peach chutney, fresh avocado and crispy prosciutto :D. Served with roasted potatoes and ketchup because I didn't have any other exciting condiments at home.

My trip to Finland has come to an end. And what an amazing way to end it. Both on the flight there and back, I noticed the stewardesses were wearing pride pins and on the flight home, I told one that I appreciate the support. Minutes later, she comes back and gifts me one. Kiitos Finnair!
