Back when I could still cook, I loved getting a rotisserie chicken and turning it into all kinds of stuff. You can get an excellent stock out of the carcass in a pressure cooker. Damn, that was some good soup...

Chicken taco soup made with corn tortillas simmered in chicken stock. With black beans, corn, and tomatoes. Topped with sliced jalapenos, tortilla chips, and sour cream.

A meal salad of cold rice noodles, chopped veg, and hoisin sesame chicken. The dressing is kind of like nuoc cham.

We didn't always have food in the house. I made lettuce-mayo sammiches, or ate brown sugar off a plate, or heated up frozen corn as a treat. But I think at my most desperate, I ate gimlet mix. I don't know if I would have survived without free lunches at school.

Okay, someone has never had good Canadian bacon. It's tender and flavorful, not dry or overly salty, and gets a little caramelized and crispy on the edges when you fry it up (from the brown sugar in the brine).
