Finished!! One Colorado, one bean, and one “combo” topped with queso fresco. ¡Provecho!

SomethingFound 👩🏽‍💻⚖️🔮 @somethingfound.bsky.social · 20/12/2024

Ok so the colorado was added to the meat and a third cup of my fresh cilantro paste. Checked spices added a squeeze of lime juice. Cooking for another hour. Also the beans. I added a few Yukon golds to them. More info in alt text.

Made these little cuties ..

SomethingFound 👩🏽‍💻⚖️🔮 @somethingfound.bsky.social · 20/12/2024

Brown meat cover with broth (see alt text) - lid up for 1.5 hours. Check on it a few times. Meanwhile prep the beans….

Brown the meat in small batches - 2 pounds of beef stew meat.

Return all browned meat to large Dutch oven and cover with liquid from boiled chiles. I also used some pork broth I had frozen. you can use beef broth or even water.

Dutch oven stove top with meat and broth - cover and simmer med low for 1.5 hours.

A little red, a little green. Cilantro “recao” to season the beans and the colorado.

Two bunches cilantro, three garlic cloves, enough water to keep to a nice paste, a little salt. Blended and placed in a dish.

Chile colorado … sauce first. Will add to post as I go along😋🤤 @strayliotta.bsky.social

Guajillo and Arbil chiles steeping in a pot of water along with one onion a jalapeño and three garlic cloves. Once boiled take off the heat cover and steep for 20 mins. Transfer to a blender with one cup of the stock.

Finished salsa roja for chile colorado. Red salsa blended and transferred to a dish.

The World. A fitting card given recent events. Achieving peace by drawing close to your circle of friends, family, and chosen family, and keeping them near. Fortified by the elements of air, water, earth and fire, you are loved and protected. ✨💖 ✨

The World Tarot card from Vice Versa Tarot. Features a red haired woman dressed in a purple ribbon. She is suspended in a blue sky within a laurel crown adorned with golden rings. Two lit candles are on either side representing pillars of wisdom and duality. The elements of air, water, earth and fire depicted as an angel, a bird, a bull and a lion-like creature adorn each corner.
