IF YOU CAN (& aren’t vegetarian/vegan/pescatarian🥴) Get you like 7 friends and go in on a cow together. Everyone will get plenty of beef and you can talk directly to the farmer. I can’t say for certain but I’d guess most states here have a cattle farming community where you can source from.
