The 'Tres Cortados' (sign with three crossmarks) was a very old wine (50+ years) from one of the oldest soleras of Pedro Domecq. Several bottlings were done in the 1980s, certainly a wine worth the attention, even though it wasn't extremely rare. Sibling: www.ebay.co.uk/itm/23429321...

In Spain schools and offices have different hours and shorter days in summer, to avoid the heat. I think in construction work it is also about maximizing working comfort. On the other hand it is a little unnatural to get up at 5 AM, which is why not everyone does it.

It is part of the regulations. As long as your wine contains more than 85% of Oloroso, you can state "A blend of Oloroso" on the label. I think it's good they now have to indicate that PX was added - in the past this was almost done by default in old sherry. The "English style"...

The categories are defined by sugar content: Medium sherry is 4-115 g/l, Cream sherry is 115-140 g/l. Bodegas can also use the more specific Medium Dry (4-50) and Medium Sweet (50-115) if they like.

It's a very English style, in a long tradition of adding a little bit of PX to any old wine before shipping to the UK. Virtually every old sherry bottled before the 1990s will be sweetened. Nowadays you need 85% of Palo Cortado to still mention it on the label (besides the official 'Medium').

Exactly but whether you still call a wine Fino or Amontillado doesn't usually impact the price much, if the age is the same. And at least there are some enological guidelines for these names.

Well the VOS and VORS categories were introduced in the 1990s to eliminate all these ambiguous names. The lower limit for 'Viejo' was set at 7 years of ageing, but where does 'Viejo' end and where does 'Muy viejo' start? There's no consistency between bodegas, so I don't like it.

I will soon review the Fino, Oloroso and Amontillado VORS (because I don't remember trying these from Urium). Tried the Oloroso yesterday and it's excellent. Perhaps too expensive as an "entry-level" wine (€ 50 for 50cl) but of course it's already 22 years old...

I know that some like the Amontillado Tradición are much older, and Maruja Pasada is 10-15 years instead of 15-20 years (which seems rather impossible for a Manzanilla). Without any certification you could claim anything.

It looks older than it is. Manuel Fernandez is the original name of Bodegas Bobadilla and the same wine / label was bottled until 1991. The grey colour usually isn't a sign of proper storage, but it may also have been a bottom pour? Is there a year stamped in the base of the bottle?

Technically it's not a lambiek since there's no spontaneous fermentation and only engineered yeasts. Also this one is so clearly artificially flavoured with cherry syrup. On the other hand, in my opinion it's much harder to find a decent 'naked' beer, say pilsener or IPA, without alcohol.
