Mmm, it certainly depends on the developers; Love Nikki for example, the CN server is around 11 years old and even with Shiny Nikki and Infinity Nikki it still receives decent updates. They could either leave the server on or make an offline mode (rare) it will depend on the playerbase too 🤔
