I've been in higher education for nearly 30 years now and consider myself quite online; however, one of the most remarkable arcs of my career is how every year I get more out of touch with the communal popular media culture of my 18-22 year old students.

I'm even so paranoid about inadvertently turning a light on out at our dark site that I replaced all of the interior bulbs with red LEDs. (This genuinely freaks people out who ride in my car and don't know that I am an amateur astronomer.) :D

My 2016 Toyota was the last generation they made in which you can turn off all interior and exterior lights (no auto-on) without removing fuses. It's probably the last astronomy-friendly vehicle I'll own, so I plan on driving it into the ground.

Did at least one of them have the mozzarella sticks? I was intensively skeptical of their cheese-pull being marketing, but it is quite legit. (Historically, I do burgers-burgers-BB-wings myself.)

It really is astonishing the shapes and textures that can be crafted out of soy protein these days. Light years from what was available even just a decade ago.

It's really messed up in higher education right now. It is like we have all collectively lost our minds. I mean, the entire point of this career is *to think, to create.* Sure, AI/ML has its uses, but not to these extremes.

The only issue I can think of is that mayo is an emulsion, so during frying as it "sets up" it might not adhere to the meat as well as traditional flour + egg, but I know some snitzel recipes actually go for that deliberately.

The mayo trick in the recipe.....I need to try that. It certainly sounds far less messy than flour + egg and I'm certain breadcrumbs would stick to mayo.

In the mid 2000s I tried my hand at coding a chatbot for the computer lab I was managing. It was an interesting exercise (and allowed me to put my English degree to work lol) and it taught me the basics of NLP. At the end of the day, though, it was nothing more than a glorified Eliza. :)

(That is a full month after us in the southeast US!) I always love move-in days. You can tell the freshman....they bring everything and the kitchen sink. Graduating seniors? Typically show up with a backpack and a duffle bag lol. :)

How y’all’s enrollment doing? Ours (large public R1) is steady, but that is only because our undergrad enrollment surged this Fall and masks the otherwise catastrophic loss of international students. If we can’t recover our typical international enrollment in two years, we’re in trouble.

When you write, do you ever switch between computer and writing longhand? In my (relatively short) screenwriting career, I would often switch between the computer and a legal pad. The change of medium seemed to keep me in the flow, as it were.

I work in academic publishing. It is getting so bad with the AI submissions. We even have hired someone to weed them out and are about to make it a full-time position. This onslaught is not sustainable.

As I have a production background, I always smile when people are shocked when they learn that, say, when actors in a long-running TV series start directing episodes, they have gone to school during the summer hiatuses to learn how to do that. It is a wildly different skillset. :)

Here at my university we have a talk we give to every researcher, faculty or graduate student, who works on federal research dollars: "Do Not Lie To the Federal Government." It sounds like the CEO could have used a listen to it. :)

Give HEB's 2% milk cheddar slices a try. I avoided them for years as they are "reduced fat," but I find I prefer them. The melt a little better and still have good cheddar flavor (I like the sharp).

I love barrel/bullet smokers. Rendered fat dripping down onto the coals and vaporizing gives a pit flavor that other smokers really can't match.

I did some hatch chile meatloaf the other day as well. I experimented with adding some blue cheese crumbles (not too much) to it and it balanced the heat of the chiles surprisingly well.

Grilled/baked chicken thighs is also phenomenally delicious. Gochujang with a little soy sauce and mirin makes a fantastic marinade. :)

This is easy. Just put gochujang on everything. :D In all seriousness, if you enjoy seafood salmon seasoned with a bit of salt, then smeared with gochujang and baked is delicious.
