Just finished Nuclear War and it mostly seems well researched but she also quotes a North Korean defector who was on Joe Rogan's podcast. I've seen clips from that interview and can't imagine accepting it as a factual account

I wouldn't have a moral objection to doing so. I've been a manager at other jobs and quit when the bosses wanted me to do something I thought was wrong. That kind of situation seems less likely here and that's one of the ways that a unionized workplace is better for managers as well as union members

Nonsense. I work at a union hotel and this is some of my coworkers first job. People move to other jobs or get promoted to management so you can advance in seniority fairly quickly. 2 years here and I'm already 2nd in seniority in my department. Union dues are simply withheld from our paychecks.
