It is short for Knickerbocker. Washington Irving wrote an amusing book in the 19th century called Knickerbocker's History of New York, a fictional tale told by a fictional character called Knickerbocker an old Dutchman The book was very popular and people began calling New Yorkers Knickerbockers.
