Forgive me, for I’ve made enchiladas on Taco Tuesday. Actually, I’ve been meaning to make this for a few days, but it’s been so hot in the evenings, I haven’t had the drive to make a hot dinner in a hot kitchen. Today I came to the realization that you can make dinner-like things during lunchtime.
