don't stir the sugar as it's melting - just rotate the pan. Warning: be careful - the caramel gets very hot; take care when you add the potatoes! And then: give it time - it takes a while of gently moving the potatoes around before they are well covered in caramel. (3/3) Happy Christmas 🥰

and if you notice that your pan is heating unevenly, rotate it along the way to make sure it melts as evenly as possible (and make sure to push sugar down from the sides before starting, so you don't have sugar that isn't going to get heated as fast as the rest). Importantly, though (2/n)

good luck - they are delicious! adding to what others have said already: yes, the trickiest part is the caramel. You want all the sugar to melt before you add the butter, but without burning. To achieve that, make sure the sugar is distributed as evenly as possible in your pan (1/n)

Very frustrating how these stories take on a life of their own and most commentators (not all, fortunately) seem to just prefer the version that gets people worked up ("what a jerk, earning a lot of money and not making an effort") rather than looking at the actual information available ... (5/5)
