Crystallographer Lee takes a single grain of sugar, mounts it on an X-ray diffractometer, and in less than a minute reveals its crystal structure. It’s an everyday ingredient, but the excitement of seeing its molecular structure appearing on the screen never gets old. #Crystallography #XRD
