I tried a couple of times - found that low and slow in the skillet with adding the broth twice worked best. I also made the mistake of skimming too much fat off which you need to really get that nice crisp quesadilla finish and ended up adding a little butter to help them crisp up easier.

I think a way you can do this yourself is you put your arm down by your side then rotate your arm back behind you and up over your head and it will slide it back into socket also. Painful but it works.

FYI fellow sandwich lovers - once you see a moldy piece of bread in the bag, the entire loaf is full of mold even if it looks fine after the next slice or so. Read an article that discussed the formation of mold and how it spreads and I will not be eating the other slices that look fine any longer.
